Wonderful tasty HEALTHY split green soup with ham (from Greece via-my great friend from Austria)
Truly comfort food but also an amazing healthy lunch to micro wave or hearty quick filling meal mid week.
Ingredients

500 gr pack of dry split green peas

1 large white onion

500 ml chicken stock (see other recipe)

1000 ml boiling water

3-4 large carrots cubed

1 tbsp olive oil
Cooking Instructions

Put oil into pressure cooker and fry onion until soft. Add everything else

Add lid and cook on high for 35 mins. Then let steam slowly cool 15 mins. Then can release and stir. Allow another 5 mins as the water will get absorbed quickly. Then you can batch reheat and eat - might need to add a little more water
