Chicken & Wakame Harusame Soup

For this Harusame Soup, Chicken can be replaced with Pork OR Beef. I often add Ginger to Wakame Soup, but I added Garlic to this soup. This is a Korean inspired version of Wakeme Soup. Add Harusame Noodles (Bean Thread Noodles) to the seasoned soup. Noodles get cooked very quickly and make this soup more filling and comforting.

Ingredients

  1. 1 small clove Garlic *grated
  2. A few drops Sesame Oil *this is for flavour
  3. 2 teaspoons Soy Sauce *alter the amount
  4. Salt & White Pepper
  5. 120 g to 150g Chicken Fillet *cut into bite-size pieces
  6. 40 g Dry Harusame Noodles (Bean Thread Noodles)
  7. 1 tablespoon Dried Cut Wakame
  8. Finely chopped Spring Onion
  9. Toasted Sesame Seeds

Cooking Instructions

    Prepare all ingredients before you start cooking.

    Heat Chicken Stock in a saucepan, add Garlic and Sesame Oil, and bring to the boil. Season with Soy Sauce, Salt and White Pepper.

    Add Chicken, cover with a lid, and cook for a few minutes. Add Dry Harusame Noodles and Wakame, and cook until the noodles are soft. It won’t take long.

    Add some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.
