Semur Beef and Potatoes (Indonesian-style Stew)

  1. 400 grams beef meat, cubes cut
  2. 400 grams potatoes, cubes cut
  3. Vegetable oil
  4. Ground spices:
  5. 1 pcs medium shallot
  6. 3 pcs candlenut (substitute: 1.5 pcs cashew)
  7. 1/2 tsp ground nutmeg
  8. Pinch cumin
  9. 1/2 tsp ground cinnamon
  10. 2 pcs cloves
  11. 1 galangal root

Cooking Instructions

    Fry the potatoes until cooked and skinned, remove and set aside.

    Put the beef meat into the bowl, add garlic, shallot, candlenut, and ginger (puree with a chopper).

    Add ground coriander, ground nutmeg, and pinch cumin. Mix well. Add 1 tbsp vegetable oil and mix again. Set aside, marinate for 15 minutes.

    Put the beef meat mixture into a pan. Turn on the stove to medium heat. Add 1 cup water and 1 tbsp sweet soy sauce (kecap manis).

    After boiling, add 200 ml water and 3 tbsp sweet soy sauce (kecap manis). Mix it well.

    Add ground cinnamon, cloves, bay leaves and galangal. Continue to cook.

    Close the pan and let the stew boiling for 5 minutes, turn off the heat for 30 minutes and don’t open the lid, turn on the heat again and let it boiling until 7 minutes. It will make a meat soft and tender.

    After 7 minutes boiling, open the lid, stirring well. Add potatoes fries, mix well.

    Turn off the heat and ready to eat with warm rice.
