This is a very simple soup that is actually super easy to cook. No special technic is required. You cut the ingredients and cook them in a pot until soft, then season with Salt and Pepper. Today I used Beef that was already cut for stir-fry, so I didn’t need to cut it. This recipe is for 4 servings as main meal. This is a very filling and comforting soup.

Ingredients

4 Servings
  1. 1 Celery Stalk *optional, thinly sliced
  2. 1 can (400 g) Crushed Tomatoes OR Diced Tomatoes
  3. 3 cups Beef Stock *OR Water and 2 Beef Stock Cubes
  4. Salt & Pepper
  5. Ground Chilli OR Chilli Sauce as required *optional
  6. 1/2-1 cup Corn Kernels
  7. 1/2-1 cup Peas
  8. *Note: You may wish to add Herbs and Spices for extra flavour
  9. 500 g Beef *cut into bite-size pieces
  10. 1 Onion *cut into small pieces
  11. 1 clove Garlic *finely chopped
  12. 1 tablespoon Oil *I used Olive Oil
  13. 1 Carrot *cut into small pieces
  14. 1-2 Potatoes *peeled and cut into small pieces

Cooking Instructions

  1. 1

    Heat Oil in a pot over medium-high heat, cook Onion, Garlic and Beef, add Carrot and Celery, and stir for a few minutes.

    Add canned Tomatoes, Beef Stock (OR Water and Stock Cubes) and Bay Leaf, and bring to the boil. Cook over medium heat for 10 minutes.

    Add Potato and cook for 10 to 15 minutes. Add Corn Kernels and Peas, and cook for 5 to 10 minutes, and season with Salt & Pepper. You may wish to add some Chilli as well.
