1950's Minute Rice Casserole

This is based on a casserole that my great aunt used to make. She said that in the 1950s, you would find it on the back of minute rice boxes. It's sorta like a rice meatloaf. I have tweaked the recipe. It's very filling, easy to make, affordable, and great for #mealprep #lunches
#quickdinners#lunchboxwarmers you can also use ground turkey. It has to be minute rice or it comes out raw.

Ingredients

2 servings
  1. 1/2 pound ground beef
  2. 1/2 cup ketcup
  3. 1/3 cup brown sugar
  4. 1 cup water
  5. 1 pepper diced
  6. 1 onion diced
  7. 1 tbsp worcheshire sauce or soy sauce
  8. 1 cup minute rice
  9. Salt and Pepper to taste

Cooking Instructions

    Mix season beef, onion, pepper, and minute rice together in a loaf pan. Mix ketcup, brown sugar, and water pour over mixture, stir

    Bake 350 for 45 minutes
