It's strawberry season again. I only tried making this sorbet at the end of the season last year and deeply regret not having made it earlier. Gorgeous, simple and full of flavour

Ingredients

  1. 500 grams strawberries
  2. 1 litre water
  3. 750 grams sugar

Cooking Instructions

    Wash strawberries well and place in a saucepan with the water. Bring to boiling point.

    When it starts boiling remove from hob and scoop the strawberries to a blender jar. Reserve water.

    Blend strawberries.

    Leave to cool

  5. 5

    The remaining water is used to make a light syrup with the sugar bringing to a boil.

    Let both syrup and strawberry purée to cool down before mixing.

    When cold put in a freezer proof container (I used a 1.8 litre tub) and fast freeze.

    Before is frozen solid mix through with blender. At this stage you can re-pot to serving individual containers or leave in same one.
