These are the ultimate brownie! They seem to be doing the rounds on social media right now, usually with Oreo's in the middle layer and coloured sprinkles in the cookie dough. You can really go mad and put what ever you want in them, but the basic recipe is one layer cookie dough and one layer brownie. Here is my recipe, but you could easily just use shop bought cookie dough and brownie mix. The brownies recipe is one I have used for years, I find it really simple and never goes wrong, it's a great recipe on its own if you are short on ingredients and time.

Ingredients

12-16 slices
  1. For the Cookie layer
  2. 125 g soft brown sugar
  3. 100 g caster sugar
  4. 150 g soft butter
  5. 1 egg and 1 egg yolk
  6. 300 g plain flour
  7. 1/2 tsp bicarbonate of soda
  8. 2 tsp vanilla exctract
  9. 2 handfuls mini marshmallows
  10. For the Brownie layer
  11. 200 g dark chocolate - broken into chunks
  12. 175 g butter
  13. 325 g caster sugar
  14. 130 g plain flour
  15. 3 eggs

Cooking Instructions

    Preheat oven to 170C/325F. Line a 9x9" square tin with baking paper or I just use a silicone mould so you don't need to line it.

    To make the cookie dough: soften the butter and beat with the sugars. Beat in the vanilla, whole egg and egg yolk until light and creamy. Mix in the flour, bicarb and chocolate chips. Spread over the bottom of the lined tin and throw on the marshmallows or whatever you decide to put in between the 2 layers.

    To make the brownie: Heat a saucepan of water and create a bain marie (put a glass bowl in the saucepan, but don't let the water touch the bowl). Melt the butter and dark chocolate and set aside. Put the flour and sugar in a mixing bowl, pour in the chocolate and butter and mix until well combined. Crack in the 3 eggs and stir until smooth. Pour over the cookie base

    Bake for 30 minutes and leave to cool for atleast an hour before you slice up, otherwise they become a squidgy mess! Enjoy!
