So simple, just three ingredients, or miss out the cheese to make them #dairyfree. Cook them for a little less for runny yolks, or as per the recipe for a set yolk that makes the muffin portable for an on-the-go breakfast, brunch or snack.

Ingredients

4 muffins
  1. 4 slices ham, parma ham or veggie ham
  2. 4 small eggs
  3. Handful grated cheese

Cooking Instructions

  1. 1

    Line a muffin tin with a slice of ham. Press the ham down to create a well and try to lift the edges of the ham up to create a deep well.

  2. 2

    Crack an egg into the ham cup, then sprinkle with cheese.

  3. 3

    Bake at 190 C for 12-13 minutes.
