Rainbow roast salmon and veg 🌈

I was unpacking my #seasonsupply order and couldn’t resist putting all the colours together
Ingredients

2 red and yellow peppers

Handful rainbow chard

Handful cherry tomatoes

1 onion

2 cloves garlic

1 tsp Mixed herbs

Mixed herbs

1/2 lemon
Cooking Instructions

Chop the vegetables, including the broccoli leaves

Lay them on a baking tray and season with salt, pepper, mixed herbs, oil and balsamic vinegar. Top with fish and sliced lemon

Roast for 20mins at 200c

Serve and taste the rainbow 🌈
