Chicken with chickpeas and tomatoes
Ingredients

1 onion, finely chopped

2 cloves garlic, chopped

2 sprigs fresh rosemary

400 g tin of chickpeas drained

400 g tin of tomatoes

300 ml water

Seasalt and freshly ground black pepper

1,4 kg chiken tight and drumsticks

1 tbsp olive oil
Cooking Instructions

Preheat oven 160°c,place the onion,garlic, rosemary, chickpeas and tomatoes in a roasting tin and use the water to rinse out the tomato tin before pouring it in. Season well with seasalt and ground pepper

Arrange the chicken tight over the tomato mixture,add and rub with olive oil sprinkle with salt then transfer to the oven and roast for 40 minutes

Turn the heat up to 180°c roast for another 50 Min until the chicken is golden brown and cooked through,taste the sauce season as needed with seasalt and black pepper and serve hot
