Cook the mix veg with salt in a little water until cooked. Drain. Keep in pot.

Dissolve the stock cubes in the water and keep aside.

Add the couscous to the mix veg.

Add the stock water and cover with lid. Leave to rest for minimum 10 minutes or until it reaches desired consistency. Separate with a fork until light and fluffy.

Season with butter and salt to taste.
