Quick Creamy Cheesy Spicy Corn Chowder

Did not have ingredients to make a salad for dinner or all the ingredients that I usually use to make this chowder in the fridge or pantry. So I pulled out everything I thought would make a good quick soup and it turned out very yummy.

Ingredients

  1. 2 cans cream of chicken soup
  2. 1 can rotel fire roasted tomatoes & chilies, drained
  3. 2 cans corn, drained
  4. 3 jalapeños, seeded and diced
  5. 2 cups milk
  6. 2 cups chicken broth
  7. 2 tbsp Cumin
  8. 1 tbsp dried oregano
  9. 1/2 tsp cayenne
  10. 1 tsp dried cilantro
  11. 1 tsp Smokey paprika
  12. Salt & pepper
  13. 4 cups shredded cheddar cheese

Cooking Instructions

  1. 1

    In large soup pot add everything except the cheese. Stirring to combine. Bring to boil. Reduce heat and simmer for 15-20 minutes. Add in cheese, stir to combine. Simmer 5 minutes to melt cheese completely. Ready to eat! Enjoy.
