Pull off the head (if still attached).

Get your thumb underneath the shell from the head end.

Crack and pull the shell away from the shrimp.

Keep the last segment of shell and the tail tip on if needed

Use a petty knife to cut along the outer edge of the back

Cut deep enough to reach the vein (less than 1/4 inches in).

Use your fingers or tip of the knife to remove the vein.

To use kitchen shears:

Insert the tip on one blade underneath the shell.

Snip from the head side towards the tail.

Peel off the shell from either side. Then go to steps 5-7.

Place the shrimp into a bowl.

Add salt, starch and water. Start gently rubbing the shrimp.

Rinse the shrimp under running water.
