Wash and remove any potato sprouts if needed.

Put potatoes in a medium pot. Submerge potatoes in water.

Add 1 tsp salt, cover and bring to a boil, reduce to simmer.

Cook 10 mins or until tender enough to pierce a toothpick.

NOTE: Do not over cook to prevent them from getting too soft

Transfer the potatoes to a colander, then drain well.

Leave it until completely cooled off.

Once it gets cool, slice into 1/2" thick slices.

Oil in a large skillet over medium heat.

Place the potatoes and spread them out onto a single layer.

Cook until golden, then turn them over.

Once golden on both sides, remove from the skillet.

Place the sausages on the skillet, and cook until golden.

Flip the sausages and add garlic. Cook until golden.

Put back the cooked potatoes into the skillet.

Add parsley and mustard. Season with salt and pepper.

Toss well then taste, season with salt and pepper as needed.
