Ingredients

  1. 9 Eggs
  2. 1/2 Cup Cream
  3. 1 Tomato
  4. 2 Cloves Garlic
  5. Handful 1 Parsley fresh
  6. 1 Teaspoon Salt
  7. 1/2 Teaspoon Pepper
  8. Oil
  9. 1 Carrot , shredded
  10. 1/2 Cup Cheddar cheese , shredded

Cooking Instructions

    Preheat oven to 350F. Chop all veggies (shred carrot) and saute until tender in oil of choice (I use coconut). Set aside to cool a bit.

    Whisk together eggs, salt, pepper, cream, and cheese. Stir in cooled veggies.

    Generously oil a round baking dish and pour in egg and veggie mixture. Bake 20-30 minutes, until set in the center. Allow the frittata to cool at least 5 minutes, and serve.
