This is so good, I have butterflies just typing about it. Eggs and veggies, what more could you need in life?
Preheat oven to 350F. Chop all veggies (shred carrot) and saute until tender in oil of choice (I use coconut). Set aside to cool a bit.
Whisk together eggs, salt, pepper, cream, and cheese. Stir in cooled veggies.
Generously oil a round baking dish and pour in egg and veggie mixture. Bake 20-30 minutes, until set in the center. Allow the frittata to cool at least 5 minutes, and serve.
