Mike's Armenian Cucumber Feta Salad

It's crisper cleaner day here in the O'Brien Shire today so ya'll know what that means!

Only fresh chilled tangy salads are on the roster! Easy, cheesy, delicious, chilly and ever SO healthy salads! My seven year old students both made this salad and took it to the homeless shelter super early this morning!

Man did it go fast! Again, fresh, crispy, tangy and delicious! So satisfying!
P.S., this easy recipe was quadrupled by my students and it made a TON of salad! 15 to 20 servings per batch with fresh homemade chips. Excelent work sweet baby girls! Just excellent! Zesty and delicious!

Ingredients

15 servings
  1. ● For The Salad [most all ingredients fine chopped]
  2. 1 (4 Pound) Armenian Cucumber [peeled - de-seeded]
  3. 2 LG Garden Cucumbers [peeled - de-seeded]
  4. 1 Pound Colorful Cherry Tomatoes [left whole]
  5. 1 Can Artichoke Hearts [drained - chopped]
  6. 1 Can LG Black Olives [drained - halved]
  7. 1 Pound Crumbled Feta Cheese
  8. 1 Cup Shredded Parmasean Cheese
  9. 2 Bottles Zesty Italian Dressing [shaken - you may not need all]
  10. 1 Each: LG Bell Peppers [green - red - yellow - orange]
  11. 4 LG Ribs Celery [chopped with leaves]
  12. 1/2 Cup White Onions [chopped]
  13. 1/2 Cup Red Onions [chopped]
  14. 1 LG Bunch Fresh Cilantro Leaves
  15. 1 tbsp Italian Seasoning
  16. 6 Cloves Fine Minced Garlic
  17. 2 Bunches Radishes [sliced]
  18. to taste Fresh Ground Black Pepper
  19. to taste Sea Salt

Cooking Instructions

  1. 1

    Rinse vegetables and chop.

    Mix everything together and refrigerate for 2 hours minimum. Stir intermittently. Enjoy!
