Cold Pasta with Cheese and Summer Vegetables

This is a cold pasta I saw on TV once about 10 years ago and I finally came up with this recipe after many attempts. This pasta is the reason I became interested in cooking!

It's rather lazy of me to run the cheese through the food processor, but the warning label on my food processor says it's forbidden to do that. So it may be better to do it with your hands or a knife. Recipe by Himasora

Ingredients

4 servings
  1. 5 large Tomato
  2. 2 Cucumbers
  3. 120 grams Processed cheese
  4. 5 tbsp *Olive oil
  5. 1 tbsp *Lemon juice
  6. 2 tsp *Salt
  7. 3 slices, crushed *Dried sliced garlic
  8. 750 grams Pasta (thin type)

Cooking Instructions

    Cut the tomatoes into bite-sized chunks. Break the cheese up into chunks and run through a food processor. Transfer the cheese into a bowl. Put the cucumbers in the food processor and run it again. (If you put in the cucumbers first, it will get all gooey!) Put everything in the bowl.

    Put the * seasoning ingredients into the bowl from Step 1 and mix. Put in the refrigerator to chill. The sauce is done. You can also do this part the day before to let the flavors soak in!

    Boil the pasta for a little longer than usual, then cool with running water.

    Transfer the pasta to plates and top with a generous amount of the sauce to finish. Jalapeños goes really well with this pasta, so garnish with them to taste.
