Uno Hana (Stir-Fried and Simmered Okara)

I looked at various recipes for uno hana and adjusted the flavor to my liking.

If you decide to make a large amount, simply divide it into single portions and freeze. When you want to eat it, just heat it up in the microwave.

Ingredients

  1. 300 grams Fresh okara
  2. 30 grams Carrot
  3. 3 Shiitake mushrooms
  4. 10 cm The white part of a Japanese leek
  5. 1/2 tbsp Vegetable oil
  6. 200 ml Water
  7. 3 tbsp Mentsuyu (3x concentrate)
  8. 1/2 tbsp Soy sauce
  9. 1 1/2 tbsp Mirin
  10. 1 tbsp Sake
  11. 2 tsp Sugar
  12. 1/8 tsp Salt
  13. 1/2 tsp Dashi stock granules

Cooking Instructions

    Cut the carrots and chikuwa in half vertically and then slice thinly. Cut the shiitake mushrooms and the white part of the leek into 2 mm.

    Heat vegetable oil in a frying pan. Add the ingredients from Step 1 and stir fry.

    Once it's cooked, add in the okara and stir-fry until crumbly.

    Combine the seasoning and then add to the frying pan. Continue to stir-fry while mixing with a spatula.

    Depending on what kind of okara you use, the moisture content will be different, so taste to check the texture while cooking. Add water a little at a time as necessary until it reaches your desired texture.

    Use the uno hana as the filling for croquettes.
