Ingredients

  1. Corn Beef (cubed)
  2. 4 large red potatoes (cubes)
  3. 1 onion (chopped)
  4. 1 bell pepper (chopped)
  5. 2 tbs olive oil
  6. 1 tablespoons onion powder
  7. 1/2 tablespoons paprika
  8. Salt & Pepper to taste
  9. Fried egg (optional)

Cooking Instructions

    Heat olive oil on medium heat in a large skillet. Once the oil is hot toss in the diced potatoes. Brown potatoes stirring as needed. Sprinkle seasoning and continue to brown the potatoes.

    Once potatoes start to cook through and turn a golden brown add in onion, peppers, and corned beef. Stir occasionally to avoid over browning potatoes. Let cook until vegetables are soft and corned beef is well heated.

    Once heated through transfer to a bowl for serving. Great with a side of toast or topped with a fried egg.
