Ingredients

20 to 30 min between cooking and assembly
3 to 4 servings
  1. 4 medium red potatoes
  2. 1 1/4-1 1/2 cups guacamole
  3. 1 couple handfuls of cilantro

Cooking Instructions

    Place guacamole in a mixing bowl.

    Microwave potatoes 5 to 8 minutes until you can gently pierce them with a fork. Cut in pieces while hot and add to guacamole

  3. 3

    Chop cilantro and mix all ingredients together well. Serve immediately or cool and chill, and serve later.
