Ingredients

30 minutes
4-6 servings
  1. 12 oz pack of bacon cut 1 inch pieces
  2. .5 lbs Cotija cheese
  3. 4 peeled and boiled cactus leaves chopped in pieces
  4. 1.5 medium yellow onion cut in half then sliced thin
  5. 3 Roma tomatoes
  6. 5-15 dried chiles japones
  7. 1-2 pieces garlic

Cooking Instructions

  1. 1

    Cut block of cotija cheese in small cubes or strips and place them in a hot frying pan. Cook each side until golden brown and remove from pan.

    Add bacon to pan and cook Until almost crispy then add cactus leaves and onion and cook together on low for about 5 stirring occasionally.

    In blender add tomatoes.5 onion garlic and dried chiles with about 1 cup of water. Blend on high until smooth.

    Turn up temp on pan with bacon mix and add salsa from blender. Once it comes to a boil turn back down and allow to simmer about 5 minutes.

    Add fried cheese to the pan and mix with the other ingredients to incorporate them. Cover and let simmer about 2-3 minutes more.
