Ingredients

25 minutes
4 servings
  1. 1 C water
  2. 1 tsp fish sauce
  3. 1 T Chile paste
  4. 1 tsp soy sauce
  5. 2 cinnamon sticks
  6. 2 T dried shitake mushrooms
  7. 1 (8 oz) bottle clam juice
  8. 1 inch fresh ginger piece, peeled
  9. 1 # large shrimp, peeled
  10. 4 oz rice noodles, uncooked
  11. 1/2 C bean sprouts, fresh
  12. Several fresh basil leaves, chopped
  13. 2 T fresh cilantro, chopped
  14. 1-2 green onions, chopped
  15. 1 lime, cut into wedges

Cooking Instructions

    Cook the noodles according to the package and drain. Set aside.

    Combine first 11 ingredients in a large saucepan. Bring to a boil, then turn down to simmer for 11 minutes.

    Add the shrimp and cook for 4 minutes. Remove the ginger, anise and cinnamon.

    Use about 1/2C of noodles in a bowl per serving. Put the soup mixture over the noodles. Sprinkle with sprouts, basil, cilantro and green onion. Serve with lime wedges on side. Yum!
