Spicy Thai Shrimp & Kale Salad with creamy Sriracha Peanut Butter dressing
Ingredients

1 bunch Kale

1 cup Snow peas
-
1 cup Fresh corn
-
3 Shredded carrots

3 tbsp Creamy peanut butter

1 1/2 tsp Siracha

4 tbsp Coconut milk
-
1/2 tsp Sesame oil

1/2 tsp Olive oil

1/2 tsp Apple cider vinegar

1/2 tbsp Maple syrup

1/2 tsp Grated ginger

1 pinch Salt
-
8 Shrimp
-
2 clove Garlic
-
1 tbsp Chopped fresh basil

2 Limes
Cooking Instructions

Mix kale, corn, snow peas & carrots

Whisk ingredients 5-13. Toss with veggies.

Mix shrimp with garlic, sesame oil, lime juice, siracha, basil, salt, pepper, & sesame seeds

Sautee shrimp in sesame oil 1-2 minutes each side on med-high heat.

Top salad with shrimp and squeeze fresh lime.
