Toasting coconut enhances the flavor of coconut for all types of desserts and is great on yogurt and with fresh fruit!
Ingredients

2 cup shredded sweetened oconut

Preheat oven to 350

Spread coconut out in a even layer on a baking sheet, place in oven and bake about 15 minutrs, stirring every 3 to 4 minutes for even toasting. Watch close as it can burn fast near the end of the time.

Set aside to vool, then store at room temperature.

Use to garnish and decorate cakes, pies, ice cream. Sprinkle on yogurt, puddings or fresh fruit. Add to cookie, brownie or muffin batter before baking!
