Graham Cracker Muffins

A friend of mine posted a photo of this hand-written recipe on Facebook when he was making a batch. His Mom got super upset because this is the family secret recipe, so he took the photo down. I, however, had already saved a copy. Shh! Don’t tell! It's a secret!! (Sorry, Dan!)
Ingredients

2 1/2 cups graham cracker crumbs

1/4 cup sugar

1 cup whole (homogenized) milk

1 egg slightly beaten

2 tablespoons honey

2 teaspoons baking powder
Cooking Instructions

Preheat oven to 400 F.

Grease muffin cups or line with paper liners.

In a large bowl combine cracker crumbs, sugar and baking powder.

Mix the milk, egg & honey and stir into the crumb mix. Mix just until moistened. (Don't over mix it!)

Bake for 15 - 18 minutes until toothpick comes out clean.

Let sit for 5 minutes before moving to a rack to cool.
