Ingredients

45 minutes

  1. 1 Whole chicken (village chicken preferably)
  2. 1 pot hot water
  3. Cucumber and coriander
  4. Chilli sauce ingredients
  5. Red chilli minced
  6. Minced ginger and garlic
  7. 1/2 tsp salt
  8. 1 tsp sugar
  9. 1 tbsp chicken soup

Cooking Instructions

    Stuff spring onion and ginger at the back of whole chicken.

    Dip whole chicken into hot water pot for 40 minutes. Make sure water is hot but not boiling. This to ensure the meat is cooked thoroughly with smooth texture.

    Take out the chicken and let it cool down before chopping it into smaller pieces.

    Cook rice with chicken soup, just add ginger, spring onion, salt and lemongrass for fragrant. You can reboil the chicken soup adding white radish, onions and chinese cabbage. The oil in the soup is good enough to oil the rice.

    You can use ready make chilli sauce or make your own with the sauce ingredients. Garnish chicken with cucumber and coriander and serve with rice, chilli sauce and soy sauce.
