Ingredients

6-8 hours
5 servings
  1. 1 pound boneless skinless chicken breasts
  2. 2 cups chopped vegetables (onions, celery, carrots)
  3. 2 tsp dried basil
  4. 2 tsp italian seasoning
  5. 1 tsp poultry seasoning
  6. 1/2 tsp salt
  7. 4 cups chicken broth
  8. 2 tbsp cornstarch dissolved in 2 tsp water
  9. 2 (12 oz) cans evaporated milk
  10. 2 (1 lb) packages of mini potato gnocchi
  11. 6 slices bacon
  12. 2-3 cloves garlic
  13. 5 oz fresh baby spinach

Cooking Instructions

    Place chicken, vegetables, basil, italian seasoning, poultry seasoning, salt, and broth in a crock pot on high 4-5 hours, on low for 6-8 hours.

    Shred the chicken, add cornstarch mixture, evaporated milk, and Gnocchi. Stir and replace cover.

    Cut bacon into small pieces and fry untill crispy. drain bacon grease from pan leaving about 2 tsp, saute minced garlic, and spinach until wilted. Add to Crock-Pot.

    Season with salt and pepper to taste and serve.
