Chicken Gnocchi Soup

Great hearty soup, as good or better than Olive Garden in my opinion.
Ingredients

1 pound boneless skinless chicken breasts

2 cups chopped vegetables (onions, celery, carrots)

2 tsp dried basil

2 tsp italian seasoning

1 tsp poultry seasoning
-
1/2 tsp salt

4 cups chicken broth
-
2 tbsp cornstarch dissolved in 2 tsp water

2 (12 oz) cans evaporated milk

2 (1 lb) packages of mini potato gnocchi

6 slices bacon
-
2-3 cloves garlic
-
5 oz fresh baby spinach
Cooking Instructions

Place chicken, vegetables, basil, italian seasoning, poultry seasoning, salt, and broth in a crock pot on high 4-5 hours, on low for 6-8 hours.

Shred the chicken, add cornstarch mixture, evaporated milk, and Gnocchi. Stir and replace cover.

Cut bacon into small pieces and fry untill crispy. drain bacon grease from pan leaving about 2 tsp, saute minced garlic, and spinach until wilted. Add to Crock-Pot.

Season with salt and pepper to taste and serve.
