Breakfast Fried Rice

This makes a hearty, satisfying breakfast that will keep you full for hours. Pictured, I used a leftover brown rice pilaf I had made the night before, so that's why there's extra veggies in my picture. Recipe adapted from: Honeysuckle at YouTube.

Ingredients

  1. 1 tbsp. olive oil
  2. 1/4 onion, diced
  3. 2 large eggs, beaten
  4. Heaping 1 cup spinach
  5. 1 cup leftover brown rice
  6. 2 tsp. soy sauce
  7. 1 tsp. toasted sesame oil

Cooking Instructions

    In a large skillet, heat the olive oil over medium heat. Once it's hot, add the onion and cook, stirring often, until it is softened and translucent. Then add the beaten egg to the pan. Cook and stir until the eggs are softly set, then add the spinach to the pan. Continue to cook and stir to wilt the spinach down.

    Add the leftover rice to the skillet along with the soy sauce and sesame oil. Cook and stir around for another couple of minutes to heat the rice through and toast it slightly, then remove the pan from the heat and serve.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
