Pasta with Lemon Salmon

Pasta is an obvious Six2go meal. When DIETing be sure to have some around. A decent portion of salmon is never going make a meal really lite but this still only comes in at 400 calories and carry the bonus of an Omega 3 fix. There's only½ of over5aday so throw some green leaves in a bowl to make a side salad if you have them to hand.

Ingredients

  1. 125 g salmon fillet (fresh or frozen) / 4½ oz .
  2. 75 g pasta dried (any type - optional) / 2½ oz .
  3. 50 g peas frozen / 2 oz .
  4. ½ teaspoon basil dried *
  5. 1 teaspoon lemon juice
  6. 1½ tablespoons low fat crème fraîche

Cooking Instructions

    Put the pasta in a saucepan of boiling water to cook for 12 minutes (or as directed for the chosen pasta). Add the peas to the boiling water after 7 minutes, ensure the water returns to the boil.

    Meanwhile mix the lemon juice, crème fraîche and basil in a pan and set aside.

    With about 5 minutes cooking time for the pasta, microwave the salmon for 2 minutes or 3 minutes if frozen. Check that it cooked through or cook further (remember if more than one serving cooking time will increase significantly).

    Flake the salmon into big chunks into the crème fraîche and heat the pan until just boiling. Take of the heat.

    Test the pasta to ensure it is cooked to taste then strain the pea pasta mix and add to the saucepan containing the other ingredients and gently stir to mix and cover the pasta with the lemony crème fraîche.

    Serve in a warmed bowl.
