Caramel Air Popped Popcorn

I love Cracker Jacks, so this is my take on that classic baseball snack. A lot of steps, but it is so worth it. You can add peanuts or not. Up to you.

Mix it up. Half of the popcorn that I pop is for the caramel. The other half is for cheddar cheese popcorn.(Recipe to follow.)

Ingredients

  1. 6-8 cups air popped popcorn
  2. 1 1/4 cup tightly packed brown sugar
  3. 1/4 cup light corn syrup
  4. 1/4 cup unsalted butter
  5. 1/2 tsp salt
  6. 2 tsp vanilla extract
  7. 1/4 tsp baking soda

Cooking Instructions

    Place parchment paper in a 13x9 pan. Pre-heat the oven to 200 degrees Fahrenheit.

    Over low heat in a small saucepan, add the brown sugar, corn syrup and butter. Stir together until the butter has melted.

    Increase the heat to medium and allow to simmer for about 4 minutes.

    Remove from heat and add the salt & vanilla extract. Stir together.

    Mix together as you put the baking soda into the pan. Make sure that it is evenly spread.

    Coat the popcorn with the caramel sauce; stirring together to evenly coat the popcorn.

    Place the caramel popcorn into the pre-heated oven for about 15 minutes. Place the popcorn back into the oven, after stirring, to heat for another 15 minutes. Remove to stir, then place back into oven 15 minutes. Take out the oven, stir and allow to cool off. Break up any clumps.

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones. Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it. In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
