Ingredients

  1. 2 tbsp olive oil
  2. 1 lb chicken breast, bite sized pieces
  3. 1 lb Andouille sausage, 1/4 inch slices
  4. 1 medium onion, diced
  5. 1 cup celery, diced
  6. 2-3 peppers, 1 inch pieces
  7. 1-2 tbsp cajun seasoning
  8. 2 1/2 cups low sodium chicken broth or water or both mixed
  9. 1 can(14.5oz) diced tomatoes or 1 cup of quartered plum tomatoes
  10. 1 cup uncooked rice

Cooking Instructions

    In a large pot coated with olive oil over medium heat, cook the chicken and sausage for 10-15 minutes. Remove from pot.

    Add the onions, peppers and celery to the pot. Cook until the onions are slightly translucent. Around 5 minutes. Stir in the seasonings.

    Put the chicken and sausages back into the pot. Cook together for around 5 minutes.

    Pour in the broth and tomatoes. Increase heat to medium high and bring to a boil.

    Once boiling, add the rice. Stir, place the lid on the pot, reduce heat to low, and cook for 30 to 35 minutes.

    At the end, stir together and fluff the rice.

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones. Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it. In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
