Cinnamon pancakes on coconut whey

These pancakes are vegan, no sugar, no eggs.

I use coconut whey because I make homemade coconut yogurt and just don’t want to throw out the whey left after the yogurt is done. If you are not strict vegan or you can not find coconut whey just use regular milk whey.

You can also make it gluten free by replacing whole wheat flour with almond or buckwheat one. It’s even better because on whole wheat the pancakes are not that lush👌

Ingredients

30 minutes
  1. 270 g whole wheat flour (or any other)
  2. 250 ml coconut whey (or milk whey)
  3. 5 tbsp coconut flakes
  4. 1 tbsp cinnamon
  5. 3 tbsp coconut nectar (instead of sugar)
  6. 1 tsp baking soda
  7. Salt on taste

Cooking Instructions

  1. 1

    Mix flour and whey, add flakes and cinnamon, coconut nectar, salt and soda.

    With a table spoon put the mixture on preheated pan. Fry both sides

    Decorate with your favorite fruits, berries, honey or yogurt 🤍
