Vegan Cheese Sauce (using butternut squash)

Because of some health condition, I have to change some of my diet by avoiding gluten and dairy. It was difficult as I have to let go some of my fav food, including cheese. So today, I am trying this recipe and to my surprise, it is very good. Tastes like cheese, even my hubby and 2 boys said so.

Ingredients

1/2 cup raw cashew, soaked with water min 4 hours or overnight

1 cup mashed butternut squash

1 cup plain unsweetened almond milk (adjust accordingly depending on how wet is the butternut squash purée)

3 tablespoons nutritional yeast

1.5 tsp ground cummin

1 tsp paprika

3/4 tsp salt

1/2 tsp garlic powder

1/4 tsp black pepper

1/4 tsp cayenne pepper powder

1/4 tsp onion powder
Cooking Instructions

Steam the butternut squash and mash it until become purée. Prepare all other ingredients

Place all ingredients into a blender and blend until sauce is creamy, 30 seconds – 1 minute. If desired you can heat cheese sauce in a saucepan or microwave before serving.
