Veggie Pasta w/Capers and Artichokes

Fun and fast meal when you want some pasta but no sauce!
Ingredients

2 cups veggie pasta

2 small sweet tomatoes

1/2 tsp chopped garlic
-
2-3 artichokes
-
1/2 tsp capers
-
Diced green olives or if you like black
-
Salt, pepper and oregano
Cooking Instructions

Bring water to boil and boil veggie pasta for six minutes and put aside

Dice garlic, tomatoes, artichokes and olives. In a small skillet on medium high melt butter and olive oil and sauté everything except the tomatoes. Once sauté add tomatoes for the last minute and then add veggie pasta. Enjoy!
