Simple bok choy chicken soup
As simple as this soup is, it’s absolutely delicious and super flavorful and nutritious! Honestly, you should double this recipe because it’s really delicious.
Ingredients

2 green bok choy

(A little more than) 1 tsp oyster sauce

2 tsp cornstarch

2 tbsp water

3 1/2 cup water (or mix it with some chicken stock)

Pinch salt and pepper

1 slice ginger
Cooking Instructions

Slice chicken thighs in long thin strips. Marinate in oyster sauce, 2 tbsp water, and cornstarch.

Chop bok choy and separate the leaves from the stem. Soak the leaves and stems in water and scrub until all the dirt and tiny bugs from the bok choy (leave the stems and leaves separated from each other though). Prepare a slice a ginger.

Boil the water and/or chicken stock with the ginger slice. Add a pinch of salt and pepper to taste. Once the water is boiling, add the chicken one by one and separate from each other. DO NOT MIX and wait a minute or two, add the rest/more of the chicken u til there’s no more chicken. Mix and wait until all the chicken is cooked through. Taste the broth. Add more seasonings to taste and/or wait for the chicken flavor to be in the soup.

When everything is done, add the bok choy stems and let them boil for 30 seconds. Then add the leaves and let everything cook for 30 more seconds. Then, done!!
