Ingredients

  1. 1 cup freshly shredded yellow potatoes
  2. 2 tablespoons flour
  3. 1 egg
  4. 1/4 cup finely diced red onion
  5. Salt and pepper to taste
  6. 1/2 teaspoon red pepper flake
  7. 2 tablespoons avocado oil

Cooking Instructions

    Shred potato. I put shredded potatoes in an ice water bath. Let sit while gathering the rest of your ingredients. Squeeze out water from potatoes using a cheese cloth.

    In a bowl place all ingredients except oil and mix well.

    In a cast iron skillet, heat skillet to a medium heat. Add oil and let oil come to temperature.

    Add potatoes in a pancake shape. Cook for four minutes on one side or until browned. Flip and repeat steps.
