Fried veggie sauce

This a low calorie health and delicious recipe. It's great for lunch or diner. And it's a great vegetarian option.
Ingredients

1 tomato

1 onion

1/2 teaspoon garlic paste

2 medium mushrooms

1 small green pepper
-
Pinch black pepper

drizzle of olive oil

1 teaspoon powdered Coriander

2 egg plants

1/4 cup water
Cooking Instructions

First clean thoroughly your veggies and chop them as desired

In a pan, fry onion and garlic paste in oil for 5 minutes until it turns light brown

Then add tomato and asparagus and let simmer for 4 more minutes

Add gradually, egg plant and mushrooms. Add the remaining ingredients and a 1/4 cup of water (optional) and let simmer for 5 minutes

Serve with rice, meat and green salad. Bon apetit
