Colin's Buttery Roasted Peppercorn Squash

Ingredients

  1. 1 Whole peppercorn squash
  2. 2 cloves garlic finely chopped
  3. 2 tsp butter
  4. 1 tsp thyme
  5. to taste Salt and pepper

Cooking Instructions

    First pre heat your oven to 375 degrees. Next take your peppercorn squash and cut it in half, carefully.

    Once this is done, clean out the seeds and guts of this fall veg.

    Next, take a fork and make grooves into the squash so that all the spices and flavours can pierce the veg.

    Once that is done take your butter,divide it between both halfs and rub it into the grooves.

    Take your finely chopped garlic and place it evenly on both halfs. Season the squash with thyme, salt and pepper.

    Place both halfs into your oven and roast them for 45 minutes.

  7. 7

    Remove from oven, let cool for a couple of minutes then enjoy. Makes the perfect side to any fall dish.

I have always loved cooking. At a young age my love for this art began as I watched my grandmother cook and prepare meals for everyone in the house. I'm told she was the first female certified chef in ontario. From there, it was a culinary adventure every sunday in my house as i watched, and helped my parents make most of our meals that day.
