Ingredients

  1. 8 medium (3 lbs) red potatoes
  2. 6 hard boiled eggs
  3. 2 cups full fat mayo
  4. 1 cup or 1/2 container full fat sour cream
  5. 1 heaping tbsp yellow mustard
  6. 2 tbsp white vinegar
  7. 1 med. white onion diced fine
  8. 2 small stalks celery diced fine
  9. to taste Salt and pepper

Cooking Instructions

    Dice potatoes to bite size, then boil eggs and potatoes together for 12 min in salted water (1/2 tsp salt)

    Peel eggs, then let eggs and potatoes all cool to room temp. Meanwhile mix all other ingredients in large bowl.

    Combine all ingredients and cover and chill 4-6 hrs before serving (best over night). It tastes better the longer it sits. Don’t be stingy on the salt and pepper!
