Old fashioned potato salad

Ingredients

8 medium (3 lbs) red potatoes

6 hard boiled eggs

2 cups full fat mayo

1 cup or 1/2 container full fat sour cream

1 heaping tbsp yellow mustard

2 tbsp white vinegar
-
1 med. white onion diced fine

2 small stalks celery diced fine

to taste Salt and pepper
Cooking Instructions

Dice potatoes to bite size, then boil eggs and potatoes together for 12 min in salted water (1/2 tsp salt)

Peel eggs, then let eggs and potatoes all cool to room temp. Meanwhile mix all other ingredients in large bowl.

Combine all ingredients and cover and chill 4-6 hrs before serving (best over night). It tastes better the longer it sits. Don’t be stingy on the salt and pepper!
