Salmon wrap
I am on the hunt for simple, healthy family recipes that I can share with my one year old. When I saw this gem from no.cow.chow.blw on Instagram I knew I just had to try it. It's so simple that I'm sure it will become one of my staples!!
Note - I used short crust pastry with this but it is supposed to be puff pastry. I just couldn't get my hands on any.
Ingredients
-
Ready made puff/short crust pastry
-
Pesto (2 tbsp)
-
1/2 side of salmon
Cooking Instructions
-
1
Roll out the pastry and lay the salmon in the middle. Make sure there is enough pastry on each side to perform the wrap.
-
2
Spread the pesto over the top of the salmon and lay the asparagus on top.
-
3
Cut diagonal strips into the pastry either side of the salmon and plait it over the top.
-
4
Pop in the oven for 20 minutes (180C) until golden brown
-
5
Serve with veggies etc. This plate looks a bit beige but it was yummy.
