Asian Style Savoury Oatmeal with Fried Egg

Ingredients

  1. 1/4 Cup oats old fashioned
  2. 1 Cup water
  3. 1/8 Teaspoon chilly red flakes
  4. 2 shallot , sliced
  5. 1/4 Teaspoon ginger , finely chopped
  6. 1 Tablespoon coconut oil
  7. 1/2 Teaspoon chicken bouillon cube , crushed
  8. 1 Tablespoon soy sauce dark
  9. 1 egg
  10. salt

Cooking Instructions

    In a small saucepan, heat the coconut oil. add the red chilly flakes and stir for about 10 seconds, till it releases its aroma.

    Next, add the ginger and shallots. when soft, add the water.

    Add the chicken bouillon cube and stir to mix.

    When the water just begins to boil, add in the oats. stir well till cooked through.

    Check for seasoning and add a dash of the soy. mix well and transfer to a serving dish / bowl.

    Fry the egg separately till desired level (i like my yolk runny) and top with salt and pepper to taste.

    Place the egg on top of the oats, and what i like to do is break open the yolk and let it ooze out all over the oats! :P

    Drizzle with the remaining soy, and enjoy!!

Hey! I'm a super busy mommy to 3 year old mixed gender twins. I guess that's enough said about the amount of time i get to spend cooking :). Most of the food I cook is about saving time, but not compromising on flavour. My biggest supporter is my hubby, who loves trying out new recipes and experimenting with different flavours.
