Family Holiday Recipe

材料

Sweet Potatoes or Yams
3 medium to large
Maple Syrup, Grade B
1/4 cup
butter
1 stick
1/2 cup
nutmeg
2-3 dashes
Flour
3 tablespoons
Eggs, whole
3
Egg Yolks
1
heavy cream
1/4 cup
Pecans, toasted
1 cup
orange zest
from 1 orange
Frangelica Liquor
1 teaspoon
Patron Citrus or Grand Mariner
1 1/2 teaspoons
Gentleman Jack whiskey
1 tablespoon

作り方

    Place yams on covered baking sheet at cook at 350 until soft

    Keep oven hot at 350 degrees after removing yams.

    Peel hot yams and place in large mixer bowl (Kitchenaid)

    Beat yams with paddle in mixer until soft, add butter.

  5. 5

    Beat until mixture is creamy. Then add brown sugar.

    Blend in sugar, then add flour.

    Crack 3 eggs, plus 1 egg yolk into small bowl and beat

    Temper some of yam mixture into beaten eggs.

    Mix tempered yam/egg mixure into yam mixture, blend well.

    Stir in heavy cream, orange zest, liquors.

    Fold in pecans by hand, and add a pinch of salt if needed.

    Pour into baking dish.

    Bake at 350 until mixture is set (approx. 30-40 minutes.
