MoMa's Tomato Pasta
Description
Ready in under 15 minutes, why not make your own pasta?

(4 people)
Onion
1 chopped
Garlic
1 clove chopped
Celery
1 stalk chopped
Canned whole tomato
1 can
Salt & pepper
1 pinch
White wine (if in stock)
1 cup
Veggie stock (powder)
1 tsp
Parsley
sprinkle (topping)
Parmesan cheese
sprinkle (topping)
Pasta
1 bag
Olive oil
1 tbsp
Bay leaves
1 or 2 leaves

Boil water in a pot with a big pinch of salt (additional)

In a medium pan, heat olive oil, add garlic and onion.

Saute until soft and translucent, about 2 minutes.

Add celery and season with salt and pepper

Add tomatoes, wine and bay leaves.

Simmer covered on low heat about 20-30 min.

Cook the pasta according to packet instructions.

Remove bay leaves and check for seasoning. Add veggie stock.

Remove half the sauce into a container for refrigerating.

Add cooked pasta to the pan and mix.

Serve with sprinkles of parmesan cheese and parsley.

You can add a teaspoon of balsamic vinegar if the sauce needs a bit of sweetness and depth.
