Description

Dairy and egg-free shortbread using a PLENTY of spinach!

材料 (8 pieces)

Baby spinach
80g
☆Preferred plain flour (I use GF and spelt flours in 1:1 ratio)
120g
☆Lemon zest (grated)
1/2 to 1 lemon
☆Rice bran oil (can be canola or sunflower)
3 tbs
☆Baking powder
1/4 tsp
☆Baking soda
1/4 tsp
☆Salt
A pinch
Walnuts
40g
Raw almonds
40g
2 tbs

作り方

    Preheat the oven to 180C. Boil water in a sauce pan.

    Put spinach in boiling water and stir for 20sc and drain.

    Once cooled, squeeze excessive water and set aside.

    Put all the ☆ ingredients in FP and blend until combined.

    Transfer the flour mix into a large bowl.

    Using the FP (no need to wash), ground nuts very finely.

    Add boiled spinach and maple syrup in the FP to make paste.

    Fold the spinach paste into flour mix until well combined.

    Form a 6x16x2cm bar on a baking tray lined with parchment.

    Using a knife cut into 4 and then diagonally to make 8 △s.

    Pork the top with a fork to make shortbread-like holes.

    Bake in the preheated oven for 15min.

    *Adjust the temperature and duration according to your oven.

コツ・ポイント

If you want to avoid the noise hazards (!) of blitzing nuts, you can use 80g of almond meal instead.
