Cut the cabbage lengthwise through the stem into quarters.

Cut each quarter crosswise into 2-inch-wide strips.

Place the cabbage in a large bowl and sprinkle with salt.

Mix them together with your hands and let sit for 2 hours.

Cut a carrot into julienned strips.
