Potato Salad

材料

Yellow or Yukon Gold potato (peeled and diced)
500g
carrot (chopped)
1 small
kosher salt
1 teaspoon
grape seed oil
1 tablespoon
raw apple cider vinegar
1 tablespoon
frozen peas
1/4 cup
frozen corn
1/4 cup
fresh Italian parsley (chopped)
1/4 cup

For the dressing
sour cream
1/4 cup
Hellman's mayonnaise
1/4 cup
sea salt
to taste
freshly ground black pepper
to taste
dijon mustard (optional)
1 teaspoon

Put potatoes in medium pot then submerge potatoes in water.

Add 1 tsp salt, bring to a boil then simmer until tender.

Add carrot before cooking is finished. (5mins prior).

Drain well, add oil and vinegar, and mash in the pot.

Transfer the potatoes to a mixing bowl, add peas and corn.

In a small bowl, whisk in all the dressing ingredients

Taste, adjust the seasoning. Add dressing into the potato.

Toss well, then stir in parsley.

Chill at least 1 hour before serving!

NOTE: Toss the potato with the dressing after cooled off →

to avoid the dressing becoming oily when mixed in!

For the salad, a whole cooked potato is the best to keep the flavor inside, but this process can go either way!
