Beyond Meat Sauce
Description
There's no meat, but it tastes like meat sauce!

For the Soffritto:
yellow or Vidalia onion (finely minced)
1 large
carrot (finely minced)
2 mediums
celery (finely minced)
2 ribs
garlic (finely minced)
3 cloves
kosher salt
1/8 teaspoon
extra virgin olive oil
3 tablespoons
red wine
1/2 cup
crushed tomato can
1 can (28oz)
tomato paste
3 tablespoons
better than bouillon roasted beef base
2 teaspoons
kosher salt
1/2 teaspoon or more to taste
freshly ground black pepper
1/4 teaspoon
balsamic vinegar
2 tablespoons
cane sugar
1 teaspoon
dried oregano
1 teaspoon
dried basil
1 teaspoon
bay leaf

Finely mince all the vegetables with a knife, OR,

Use a food processor to save your time!

Oil in a large Dutch oven over medium low heat. Add veggies.

Stir in salt. Sauté until veggies get soft for 10-15 mins

Increase the heat to medium. Add beyond beef.

Break up the beef and cook until meat gets brown.

Add red wine and cook off the liquid. Stir occasionally.

If you can see the bottom of the Dutch oven, move on.

Stir in tomato/bouillon/sugar/salt/pepper/vinegar/herbs.

Add bay leaf, bring to simmer, cook 1hr. Stir occasionally.

Taste, add salt as needed.
