Mushroom Vinaigrette
Description
A rich and low calorie dish with tons of fiber and protein!

mushroom (oyster, trumpet, shiitake etc)
1 lb
extra virgin olive oil
2 tablespoons
shallot (sliced)
1 large
garlic (finely minced)
1 clove
white wine
2 tablespoons
kosher salt
1/4 teaspoon
freshly ground black pepper
1/4 teaspoon

For the vinaigrette:
extra virgin olive oil
1/4 cup
balsamic vinegar
3 tablespoons
county dijon mustard
1 tablespoon
maple syrup
1 teaspoon
kosher salt
to taste
freshly ground black peper
to taste
fresh Italian parsley (chopped)

Use your hands or a knife to make bite-sized pieces.

In a mixing bowl, whisk in all the vinaigrette ingredients.

Oil in a large skillet over medium heat, add mushroom/ salt.

Add wine then cover, cook until the mushrooms get wilted.

Uncover, add shallot/garlic/pepper then cook until tender.

Transfer to a mixing bowl, add parsley. and stir well.
