In a small bowl, combine meat and salt, set aside.

Use knife to finely mince all the vegetables, OR

Use a food processor to save your time!

Oil in a large Dutch oven over medium low heat. Add veggies.

Stir in salt, and sauté until veggies get soft about 10 mins

Add 3tbs oil and increase the heat to medium high, add meat.

Break up the beef and cook until meat gets brown.

Add red wine and cook off the liquid. Stir occasionally.

If you can see the bottom of the Dutch oven, move on.

Add ham/tomato/bouillon/sugar/pepper/herbs then stir well.

Add bay leaf, bring to simmer, cook 1hr. Stir occasionally.

Taste, add salt as needed.
