Everyone's favorite comfort food, isn't it?

材料 (8-10 servings )

grass fed beef or bison ground meet
1 lb
kosher salt (for the meat)
1 teaspoon
For the Soffritto:
yellow or Vidaia onion (finely minced)
1 large
carrot (finely minced)
1 large or 2 medium
celery (finely minced)
2 ribs
garlic (finely minced)
3 cloves
kosher salt
1/8 teaspoon
 
extra virgin olive oil
3 tbs + 3 tbs
red wine
1 cup
Prosciutto de Parma (minced)
2 oz
crashed tomato can
1 can (28oz)
tomato paste
7 oz
better than bouillon roasted beef base
2 teaspoons
cane sugar
1 teaspoon
freshly ground black pepper
1/4 teaspoon
dried oregano
1 teaspoon
dried basil
1 teaspoon
bay leaf
1
kosher salt
to taste
 
freshly grated Parmesan
to taste (optional)
fresh Italian parsley (minced)
for garnish (optional)
your choice of pasta

作り方

    In a small bowl, combine meat and salt, set aside.

    Use knife to finely mince all the vegetables, OR

    Use a food processor to save your time!

    Oil in a large Dutch oven over medium low heat. Add veggies.

    Stir in salt, and sauté until veggies get soft about 10 mins

    Add 3tbs oil and increase the heat to medium high, add meat.

    Break up the beef and cook until meat gets brown.

    Add red wine and cook off the liquid. Stir occasionally.

    If you can see the bottom of the Dutch oven, move on.

    Add ham/tomato/bouillon/sugar/pepper/herbs then stir well.

    Add bay leaf, bring to simmer, cook 1hr. Stir occasionally.

    Taste, add salt as needed.
    SERVE!

    salt. Adjust your seasoning by the can you use!

コツ・ポイント

Add sugar to cut off the acidity from tomato. The next day gets even better!
