Red Lentil Soup
Description
A hint of curry flavor makes you ask for more!

red lentils (rinsed)
1 cup
yellow or Vidalia onion (diced)
1 medium
carrot (diced)
1 medium
celery (diced)
1 stalk
extra virgin olive oil
2 tablespoons
kosher salt
1/8 teaspoon + 1/2 teaspoon
garlic (minced)
3 cloves
ground cumin
2 teaspoons
curry powder
1 teaspoon
frozen corn
1 cup
6 cups
better than bouillon vegetable base
1 tablespoon
freshly ground black pepper
1/4 teaspoon
2 tablespoons

Get ready with all the veggies!

Oil in a large Dutch oven over medium heat, add veggies.

Add 1/8 tsp salt, and cook 10 mins to make a soup base.

Stir in garlic, cumin, and curry and cook for 1 minute.

Add water, lentils, corn, bouillon, salt, and pepper.

Increase the heat to medium high and bring to a simmer.

Scoop the scum from the surface, and discard.

Cover the oven and lower the heat to medium low.

Cook 15 mins or until lentils get tender.

Taste, add salt and pepper as needed.

Remove from the heat, stir in lemon juice and serve.
